You know those cozy afternoons when you can smell autumn in the air? 🍂
The leaves are rustling outside, the scent of freshly ground coffee fills the room,
and all I want is to curl up under a soft blanket and enjoy a slice of my homemade apple pie — with a steaming cup of coffee, of course. ☕😻
The recipe is simple, quick, and even Babú says it’s “heavenly, Taby!” (though he usually steals the whipped cream off my coffee… 🙄)
Taby’s Coffee-Kissed Apple Pie
For the crust:
250 g (2 cups) flour
125 g (½ cup) cold butter
80 g (⅓ cup) powdered sugar
A pinch of salt
1 egg
1–2 tbsp cold water (if needed)
For the filling:
5–6 tart apples
3 tbsp brown sugar
1 tsp cinnamon
1 tsp ground coffee ☕ (that’s Taby’s secret twist!)
1 tbsp lemon juice
1 tbsp breadcrumbs or semolina (to soak up the juice)

Instructions:
Mix the flour, sugar, salt, and butter until crumbly. Add the egg and form a dough. Wrap and chill for 30 minutes.
Peel and slice the apples, then toss them with sugar, cinnamon, coffee, and lemon juice.
Roll out half of the dough and place it in a pie pan. Sprinkle with breadcrumbs.
Add the apple filling and cover with the remaining dough (or make a lattice top).
Bake at 180°C / 350°F for about 40 minutes, until golden brown.
Serve with a big swirl of whipped cream — because according to Babú, everything is better with whipped cream! 😸
